Coolant temp issue

So long story short I installed a GH intercooler about a week ago. Drove car for a week going short trips all city streets and no issues. After a week I decided to have some spirited fun driving nothing excessive just few quicker launches and my temp gauge started to go all over the place. Figured I had air in system, came home let it cool and the next morning I noticed upper radiator hose suctioned almost together. Opened cap and hose expanded. So I can only assume the cap is not venting correctly. Haven’t lost any fluid that I can tell. Other weird symptom I have is when the car started to run hotter than usual(240 degrees) I cut it off and went inside grocery store. In store roughly 10 mins and came out. When I cranked car the temp was even higher (251 degrees) got the coolant high temp light on then as I sat idle the temps begin to come down to 230ish area. I found this odd as I thought even when u cut car off your cooling system (fans as well) continue to run to dissipate heat or am I wrong on this? Either way Crept it home and after letting it run idle with cap off for about 45 mins with giving it throttle for 30 seconds intervals intermittently I thought I had fixed it, but driving to work I was fine, driving home with a few quicker launches and we are back with the running hot issue again. Please help with any advice.

Current mods: GH tune, air aide CAI, XDI 35 fuel pump, GH intercooler.

The cap doesn't vent. It's a sealed system. You still have air trapped in the system.

IOW, the cap will let excess pressure out, it will not let air in.

Gotcha, I watched a YouTube video of some guy saying the cap vented excess air and pressure in system as you drive which made sense with no radiator cap but you think it’s air in system as well?

IMHO you should always use a Vacuum Refill kit ($45 Amazon) to ensure all air is removed from the cooling system.
I used one of those funnel kits from autozone but tbh I’m not sure if I used it right, obviously not atp. I know this is gonna sound hilarious but I hate cooling systems ATP they are so finicky. Some how some way I always get air stuck in the damn thing. Gonna send it to a shop to have them fill coolant and pressure test coolant system and engine pressure test to make sure nothing crazy happened.

I guess I should also add that I don’t have an air compressor, all manual hand tools unfortunately. Back in FL I had the hook up with a lift and all but here in Vegas working with the bare minimum.

And if you removed/replaced the thermostat, did you make sure the jiggle pin was at the 12 o'clock position?

Didn’t have to remove thermostat for the job so it’s the original in its same position prior to the IC install.

Just an update, took it to ford and let them change coolant, haven’t had time to see if it fixed problem because like a real dumb*** I left the bumper off when I took it to ford thinking it would be much faster on them and easier. I knew I would pay same amount but I was trying to get in and out as fast as possible because I had tickets to NBA summer league, needless to say when driving the fender wall blew back from wind pressure into the tires on both sides and rubbed the front half off where all my bumper screws go. So I ordered new fender liners so I can put bumper back on. Also tightened up HPFP base plate as I noticed oil right by it so either it wasn’t tight enough or seal is bad. Going to put a new clock spring in it Thursday as mine went out completely now. It is one of those parts that held on forever though. Then going to figure out this back up camera working intermittently and some hot pipes as I can see mine starting to split/dry crack in certain bends on the hose connections. Through some brakes on her and see what she does on a few rides around the city.
