I have a jet boat that's cooled by lake water without a thermostat. I've drained outboard lower units that have been neglected for years. I've seen more than my fair share of milky oil, and it's never looked remotely close to that. Much more gray. Maybe it's a conventional vs synthetic thing. Either way, it shouldn't be "emulsified" from sitting in a catch can. I just think there's something not right with this picture. Don't know what though.You wouldn't want to suck liquid water into the engine, but it was a vapor before the catch can condensed it out. That tiny amount of water vapor (without a catch can) wouldn't hurt anything.
The "chocolate milk" is the oil layer. It's actually an oil and water 'emulsion'. Just like when someone blows a headgasket and their oil looks milky. The 'beer' is just dirty water.
