Catch can surprise

I am in the process of getting my SHO sorted out. I got a catch can to install and while I was working on my injectors I noticed I already had one. I never noticed it before. I decided to empty it and there was the obvious oil but also about an inch of water/oil milky mix. I have had the car for a while and the oil always looks fine. Is this normal or could it mean the water pump went out and has already been replaced? I hate sounding like a newbie but this car has been a complete re-education in car maintenance

Milky oil or even clear water is normal in the catch can.

It's just condensation from cold starts. Normal.
