If I am on highway/constant speed my engine temperature is half way or lower on the gauge. If I am in stop and go traffic or sitting for 10 or 15 minutes my temperature gauge get about 3/4 or the way. Is this normal or do I have problems? Also is a new radiator or sensor a good idea? And is my temperature gauge bad?

Your readings are just about perfect, especially in Ohio in the winter. The engine likes to run at a high temperature where it is ultra efficient.
Only get a new rad when it starts to leak, no leak, things are good. It is not like the old days when the copper fins separated from the transfer tubes (after they turned green), and you lost your cooling efficiency.
If the high reading on your gauge worries you, you can replace the thermostat, either with another 195 Degree F or a 180 Degree F unit. When you gauge jumps around from hot to cold to back to hot, then your thermostat is telling you it wants out.
Leave the sensor alone, it seems to be doing a good job.

SHOs vary quite a bit in the exact position where the temp needle comes to rest. So, keep an eye on your coolant levels & color (in radiator/reservoir), nose alert for coolant smells, and touch sensitive to check for hoses going soft/bad. All normal stuff.

If you do a lot of stop and go driving, you could put in a lower temp thermostat, like sperold said. Might lose a bit of mpg tho, as AFR will run richer intially for a tad longer.

To me 3/4 of the way seems a little high but still within normal. The few SHOs I have owned very rarely went above half way when the coolant system is functioning properly. If you have an ATX one of your fans may not be working.

it depends on which thermostat you have in the car - a 180* will never get above about half way, while a 195* will get up 3/4 of the way as he described when sitting in traffic with no air flowing over the radiator.
