You will probably not find a single optimal choice rim and tire combination for both straight line acceleration and road course handling. The greater the rim diameter, the greater the rotating inertial mass and the slower the acceleration.
As far as handling, testing by Car & Driver (or was it Raod & Track?) magazine on a BMW 3 series found the 17" rim to produce the highest handling numbers when compared to 16", 18" and 19" rims. All things change though, tires certainly have changed and the results may be different today.
One thing that hasn't changed is the cost of the tires for the larger rim diameters. The larger the rim, usually the greater the cost. You may also have a limited choice of tires in some of the rim sizes (17") that will properly fit the SHO. The optimal size 17" tire to replace the original is 225/50-17. My wife's Maxima SE uses this size and the choices are severely limited compared to the 225/55-16 for my SHO's 16"x7.5" rims.
