What if you needed to remove the engine and transmission for repair and you wanted to drop the sub-frame to do it, how high would you need to jack the car up to clear the body?

i would say atleast 3.5-4 feet better off pulling both out the top

Pull it out the top, Take off intake manifold, pull wiring harness, remove radiator fans, remove alternator, disconnect all hoses and extra wires, remove cv axles, trans mount, go underneath and take off the exhaust, tie the hood back, hook up a chain, disconnect master cylinder to ABS pump hose and pull it out the top I have done it both ways and I have to say taking out the subframe bolts suck and have snapped at least one when I did it and it was a PITA so I always take it out the top I have done it in 3 hours
