The number one issue - and you dont sound like you have violated your cats, is the use of off road exhaust - straight pipes - cattless - if you keep your catalytic converters the world is your oyster.
The vendors will take a remote baseline of your stock programming, then load a base tune - have you log your performance ask questions about full throttle - daily driving. They will also have you fill out a list of mods that they need to special tune for. Many say you can get 50-100 WHP from tuning.
