Car running hot with a/c on

I've noticed that my car has been running a bit on the hot side with the a/c on. Needless to say I live in Florida and temps have been in the upper 90's. I have an autometer water temp gauge and it often reads 210F on the highway and can creep even higher on the street. The fan is turning on at 210 but seems as if its not sufficient. Does anyone think it could possibly be the thermostat or possibly a radiator cap? Also has anyone installed the fan turn on switch that they sell at part stores that allows you to set your fan turn on temp?

ive seen those switches but personaly never had any positive luck with them, ur best bet would be to change out the thermostat it couldnt hurt and you might be able to find one that opens at a lower temp

210 is fine, 230 is not so good.
