got the motorcraft thermostat today, put it in my car, now she runs nice and cool again. I did some research and found out something that partially explains why those stant thermostats suck though... they are meant for a 7psi radiator cap, ours (or mine at least) is 16 psi, so perhaps that causes some of the trouble. The stant definitely is crappier though, it just feels crappy compared to the motorcraft if you pick them both up.

I noticed something else, too. A few months ago I posted about my engine making a sorta "horn" sounding noise, constantly, like blowing over the top of a bottle or something. A few others said they have it too. It went away when my thermostat crapped out, and now that I have a new one, it's back, so apparently it is something to do with the coolant system.
