Water Gauge Location

Where is the best place to stick a water temp sensor for my gauge. I am redoing some gauges in the car and the previous owner put in a tee next to the thermostat and stuck the sensor there. Is it better to stick the gauge on the back of the block? Which is more accurate?

the water flow from the pump is through the block, to the heads and then either directly back to the pump or through the radiator back to the pump.

so, you would want the gauge somewhere either on the 'spider' at the rear of the heads, or in the crossover tube going back to the pump.
