Is there any easy way to run a switch to manually operate your cooling fans, while keeping the auto on as well? My friends Grand am has a kit to do it.

You've already got one. Just turn on your A/C!

Otherwise, it's a simple matter of running a wire through the firewall and figuring out if you want the low or high speed fans to be turned on. A dash-switch within easy reach of the driver is about all else it requires.

Different logic is required for low or high speed control. For high speed control, set it up so that the switch grounds the HFC input to the CCRM. For low speed, apply battery voltage to the LFC input, using two diodes to isolate the circuits.
