Well today I installed the 160 degree thermostat. I'm rather surprised at the results. Idle temperature is around 171 degrees Fahrenheit. Highway temperature is around 178 -181 degrees Fahrenheit. The really good news is despite the drop in temperatures, gas mileage did not drop. In fact I gained about two and a half miles a gallon. This is with really crappy winter gas. So Highway mileage is around 27.5 a Imperial gallon or roughly 22.9 per American gallon.
I'm guessing that the increase and timing is offsetting the decrease in temperature.
EDIT: I did some reading up and apparently Canadian vehicles display MPG in American gallons. So it's 27.5 MPG per American gallon. I hope that's right because that works up to about 33 miles a imperial gallon.
