Sounds like the sensor in your current coolant tank is no longer working. That happened one time to me on the way to an alignment shop. Go figure.I unplugged the battery for about 30 minutes yesterday. The Service Engine Soon light is off. The low coolant light is still on. I made use that the coolant was filled yesterday, but, it didn't help. I will have the new Coolant Reservoir put on soon.

But you may want to check the connector. It is on the bottom of the tank and may have come loose.
