Overheating issues

I have a 2010 sho it overheats everyday no white smoke no coolant leaks but it reads its overheating changed the thermostat haven’t changed the water pump since I don’t hear no whining or anything from the front end fans kick on once in awhile but not all the time. I’m at a dead end. Also once the car gets moving it drop down but today it didn’t . The car started stuttering and I couldn’t get up to highway speeds wondering why if anyone has had these issues & figured it out

Monitor the coolant temperature. Engine idling, A/C off, the low fan should come on at approx. 212F. Engine should cool down to 205F and fan goes off. Engine idling, A/C on, the fans should run either low or high and temp should be in the +-190F range. Post results.

Most of the time if the fans are kicking on and it still overheats....radiator time.

Those radiator fins get really clogged too
Not so much on the SHO. All that crap has to get through the AC condenser, IC, and then to the Radiator.

If I was the OP, I would remove the front clip, pressure wash the AC condenser at the minimum.

I say radiator because it is 13 years now.....

I’ve used a temp gun on the lines & radiator they show 190 degree at operating temp & as it’s overheating it shows 219 on the intake manifold hoses are at 170 top and bottom radiator is at 190 as well

was the coolant drained/replaced and not properly burped?

The dealership did replace the coolant so most likely they didn’t burp it correctly since it is leading to air bubbles thru the lines . The coolant lines didn’t feel pressurized so I’m Burping the system as of now to see if that helps .

Theirs coolant coming out of the bottom radiator hose that attaches to the bottom of the reservoir it’s only dripping I don’t feel or see no cracks in the tank or line . It still doesn’t feel pressurized but all the other kind are good . No fans are kicking on either but the temp gun back on the manifold it read 210 throughout the whole manifold . Coolant lines were still at 190 .

I wasn't clear about monitoring temperature. Using a scan tool or other device, connect to the DLC and monitor what temp the PCM is reading. Infrared thermometer is OK for general readings. You want to know the actual temp the engine is reading. That is what controls the fans. Other inputs are vehicle speed, ambient temp and A/C high side pressure. Idling with the A/C off negates those inputs.

Report what temp the fans come on and go off.

Now you bring up that the dealer changed the antifreeze. When was this? Yesterday, a week ago, last year? Does the overheating correspond to the antifreeze change?

I'm going to guess that the fan control module is bad.

It was a year ago but I ended up hitting a deer & their wasn’t damage to the radiator nor front end it was just a the bumper and headlight that I had to replace but since I got it up and running now this issue has came along and I changed jobs so my drive wasn’t long enough for the car to reach normal temps and now I work around 30 miles from home so now the motor is working harder then before .

The slight leak from the bottom of the surge tank could be your problem. Although it only leaks a slight amount of of coolant when under pressure, it's when the system cools down that may be the problem.
A negative pressure develops in the system as it cools. Air can be sucked in through the leak, putting a bubble in the system. I had a '94 with a mysterious overheating issue. I eventually found a slight split in a heater hose that would leak out a slight amount of coolant under pressure, then suck in air when a vacuum developed while cooling. I cut off an inch from the end of the hose and reattached it. Problem solved!
