If it were me, this is what I would do:
- SHO Nut 3.2L Upper Gasket Set: $143.73
- AutoZone Fel-Pro 9821PT HG's (2): $105.98
That's $249.71 + shipping, tax, etc. for gaskets, which includes every conceivable gasket you could need for only ~$44.00 more than you're planning to spend buying the gaskets piece-by-piece. You could then turn around and sell the 3.2L HG's and the extra valve cover gaskets (as well as any others you have left over) on eBay and probably recoup at least that $44.00, maybe more. I realize you already have the valve cover gaskets and would like to use those, but by buying the gaskets piecemeal you run the risk of not having a gasket which the mechanic ends up needing to complete the job.

I think just having the new spark plug tube seals makes the set worth it (it would be a shame to have the valve covers off and not replace them only to have the plug tubes start filling with oil right off the bat).
Another thing you might have to consider adding would be new head bolts (they are reusable, but you should double-check them before re-installing to make sure they're not stretched), which last I heard ran about $90 for a set.
