What could be causing my temp gauge to bounce around when I'm accelerating at over half throttle?

It may also be causing the car to run a little rich as well.

Loose or corroded wire on the temp sender. It is the one with one wire going to it.

Lots of sensors, lots of wires! Where is it at on the engine, general area will work.

They are under the throttle body.
