About a month after picking up my Gen1 SHO late last summer, my 'Check Oil' light came on. So I pulled over got gas and checked my engine oil level which was at about the middle of the dipstick or about a half a quart low. No big deal since I just shut down the engine and I just changed the oil with Castrol GTX 5w-30 right after I got my SHO so the oil was only a month old.

At first the 'Check Oil' light would come on intermittently but after a while it just stayed on. I read a bunch of posts saying the light is for oil level so no big deal if you pull the wire off the sensor which is just above the drain plug. Well I did that a month ago and the light never turned off.

Anyone else have this 'Check Oil' light issue?

What did you do to fix it? Do I need to ground that wire from the sensor.

Here's a pic of the light on the dash that I'm talking about.

as I recall, with the wire disconnected, the light should stay on all the time as it expects to "see" that there is oil there. In my experience, the connector gets full of crud and in many cases the wire actually comes off the connector. If you get under there, you should be able to reconnect the connector and make it happy again.
