Definitely plausible. There are CF hoods in various colors available from SHOSource. Its not an inexpensive process to do it yourself, but definitely doable!

I was thinking a complete car from carbon fiber. Get a slo and make molds of all of the body structures including floor pan and a b and c pillars

You could get away with that for 90%. The rear bumper, air fin, front bumper and driver side dash are significantly different. Keep in mind that structural safety becomes an issue if you start replacing the steel components. Carbon fiber is stiff, but would not hold up in most if any collisions. Be sure to have a cage put in, if going that distance.

Or you could use aluminum honey comp for structural reinforcement. And crome molly as a cage

If you have large amounts of time and significant money, the CF could be done. But as pointed out above, it's a totally un-analyzed package for crash protection. And uninsurable except for a defined value policy. OTOH, if you actually built it, if it got in a wreck bad enough to destroy it you'd just want to die anyway.... And you'd want a nicer engine than a Gen III, or at least one pumped up a little.
Thinking of carbon fiber.... At an autocross event where some classes have to be measured and weighed, someone had a late model Corvette on the scales. I noticed that its curb weight and wheelbase were practically identical to my '92 SHO. Of course, the SHO sticks out a foot or two more on the front and rear! So instead of your project, why not do the body swap Q-ship move and put a SHO body onto a C7? I've seen some really nice retro-rods done on Corvette chassis. The trick is to get it titled as the 23 year old car so that it will pass the smog referee (at least that would be a factor here in Cali).
