what minnesho said. if its slow-ish and moving you might have a air bubble in your coolent and its moving cause of that. thats what my prob was. if its going up and down way quick idk

If the cooling system is good and able to maintain pressure and more important able to maintain the vacuum created when the engine cools then there will be no air bubbles except for when the cooling system is opened for maintenace.

If the wire from the sender is shorting out this will cause the needle to swing abruptly. As the engine or body moves the short would be intermitant and the needle would swing back to normal. Same could be said for a loose connection on the sendor or the IC cluster.

Unless you had just had the cooling system open prior to this episode you still have a problem. There should be no air in the cooling system as it is sealed.

As the coolant heats up it expands into the overflow tank, as it cools down the vacuum created will pull the coolant back in. Over time any air in a sealed system will be dissolved into the coolant under pressure then as the coolant it is expelled into the overflow tank the air will undissolve because of the lower pressure. A few heat/cool cycles will remove any air completely from the engine cooling passages and keep it out.

Probably need a new radiator cap.
