Just bought an '89 SHO that runs real well. Only problem is, in corners, the steering wheel slips a few degrees, but the steering angle doesn't change. Has anyone experienced this? Any idea what it might be? Fluid? Pump? Something mechanical?

Something mechanical.

Look at the square shaft in the flex connector that is buried in your floor mat under the dash. It connects the rack to the linkage from the steering column.

The rack itself can have issues, but it is more common to have "slip" at the midpoint, but who knows.
