Question on amount of moisture out the tail pipe

I have a black 89 w/135k on it. I am doing the Valve shim this weekend.
I just had the cps/ckps, evr, plugs,wires and have had the waterpump replaced and o2 sensors.
The car also blew it's cats apart because of the evr and o2' so it has new catalytics on it now.
I noticed that the car seems to have a huge amount of moisture come out of the car in the mornings. When I put the car on jack stands, water practically ran out of the exhaust...
I had a ford dealer do the work on the ever/o2/cps/ckps etc, they also replaced the valve covers and cleared the codes. I checked and I am clear on codes.
My question, Could I have a blown or leaking head gasket? I note that every time I run teh car I have to put more water in the overflow resevoir. If I don't the light is on when I start the car, and it goes off as the car warms up. Stop the car let it sit overnite and the 'water low' is on when I start the car in the morning. I don't SEE any leaks in the water bottle or radiator.
Could the water be from the bad cats? and poor running it has had? I am going to be driving it quite a bit over the next week. It has been sitting more than driving up to this point.
Hints as to what I should be worried about? Things I can check while I have it torn apart this weekend? :confused:

Sounds like the engine just hasn't been run much and you you have an accumulation of condensation in the exhaust. Once you get it together, take it out for at least a 30 minute drive. Get everything up to operating temps.

As long as you don't have evidence of coolant in the exhaust, your head gasket is likely okay. The radiators in these cars are notorious for "mystery leaks".

Since you replaced the water pump recently, I would say you are still working the air out of the system. SHO's take a long time to work the bubbles out. Best to carry extra coolant with you to keep that reservoir full. I replaced my radiator and my pump, seems like it took me forever before I stopped having low coolant. So long as it is not leaking out from someplace I would say you are fine.

Now as to the exhaust, sometimes because we notice one problem, we tend to focus more on things with our cars that we just didnt notice before. It is winter time, so you will see more water in your system, not because suddenly you are producing more water, but the cold weather is condensing the hot gases that previously were coming out as steam.

I would say keep a close look and give your fumes a whiff every now and then, but probably you are fine. If you start billowing large (I mean really large) clouds of white smoke then you might have a problem, but that would come with other symptoms as well: like low oil pressure, crappy running car, and major major gobs of snot on your oil cap.

The low coolant sensor doesn't always read correctly. They tend to get corroded and thus, the float sticks and gives a false reading.

Hey Mark,
(He's on the other end of the Gorge) I get water out of the tail pipe until I get it plenty warm. Do you get the Oxygenated fuel up there in The Dallas like they pump down here in Portland in the winter? Alcohol has a high moisture content. Oregon doesn't inspect there fuel either, so you never know what your getting.
