One of my many oil leaks was this. It was gushing. I went to oreillys and got a replacement: standard ignition PS149. It has a coating on the threads. My problem is that I cannot get it fully seated. It lacks maybe 3/16" from all the threads going in. It feels very tight. Is this the wrong part, or is this normal?

Oil pressure sending units use pipe threads meaning the threaded area is tapered. The design causes it to tighten before it is threaded all the way in and seals the threads as it is tightened.
It’s not designed to thread all the way in.
