My coolant temp gauge died last summer. It immediately drops all the way past normal and sits there. I've tried changing the sender and gauge to no effect. I tested the gauge by applying 12V and it does a complete sweep. I tried testing the sender by checking resistance with a meter, but I couldn't get any readings that made sense.

I know there is power because the gauge moves when the needle is manually moved up and then power is applied to the vehicle. Any ideas on what to do next?

the typical problem with those is the connector that fits on the sender gets all corroded so the resistance that the gauge sees is too high, making the gauge read wrong.

I already had to cut the boot off and put on another connector. Can I safely extend the wire a few inches?

I have a temp gauge that goes on after turning the ignition on and off, it seems since I see the temp creeping up the gauge. What is "normal operating temp range" with stock motor? Sitting in mid April in Bay Area, California. The infrared temp gun indicated between 195º - 205º reading at top of hose near radiator cap. Anyone?

195-205 is going to be toward the upper end of the "normal" range on the factory gauge.
