Hi so i have a 13 sho and last night i was driving home when the i got the warning that my car was overheating i pulled over shut the engine off and the temp gauge immediatley went back to normal so i let it cool down then starting driving again while watching the gauge and turning on the heat, it started going up and down saying it was overheating then going back to normal operating temp and also the heat would work then stop working and go cold randomly and alsp the throttle would sometimes not respond as well i would have my foot to the floor and it was barely going felt like it was in limp mode but then it would go back to normal im thinking something electrical but idk i need help im going to get codes read today

First thing I'd do is replace the thermostat and verify coolant level.

I would take a stab in the dark and suggest that maybe the coolant temp sensor is malfunctioning. That would explain the rapidly erratic temp readings. It would also explain the "limp mode" if the computer thinks that the engine is overheating. Reducing power would reduce heat generated.
Like I said, just speculating.

Those are classic symptoms of low coolant level, check coolant level and
Very important, make sure there isn't water/coolant in the oil, if there is, stop driving it immediately.
Or, water pump...
And the water pump is internal to the engine so it can leak into the oil which will wipe out the bearings quite quickly.
