The accessory drive belt set-up is different, other than that. I couldn't tell ya.

There is one belt instead of two to drive the accessories.

There will be an EGR canister next to the intake manifold ( all 3.2's have them, only 3.0 in cali have an EGR)

I believe the coil pack is angle'd differently.

There is also more webbing in either the block or oil pan, cant remember which.

Easiest to tell is the EGR and the belts.

If the assy's and such aren't installed, the KOB castings on various parts and the label on the rear valve cover will tell the tale, as will the oil drain plug -- rear facing is 3.0L, side facing is 3.2L.

Also the DIS on the 3.2's is raised up higher and set back a little farther on the crossover tube than it is on the 3.0's.

I remember that there is more webbing on a 3.2 block than a 3.0. Especially around the freeze plugs. Look at your 3.0 block, it should be a little smoother on the sides of the block. Then look at the 3.2, if it is a 3.2 it should have more webbing. This is a definite way to tell between the two.
