Do you nee to change the intake gasket to do the valve cover gaskets or can I just take the tanks off the intake 95 SHO 3.2

You'll need to pull the intake off the heads to pull the valve covers. You may or may not need to replace the metal gaskets between the heads and intake.

You do need to remove the intake thats for sure, the metal intake gaskets are reuse able as long as none of the black finish is damaged.

what do you do with the throttle body and the IAC

Just unhook the plugs and the cables and leave them attached to the intake.
