I was wondering how exactly I should go about breaking in a new clutch(SHO NUT) on a new Fidanza flywheel and how long the break in period should be.

The stock clutch doesn't need much of a break in period, maybe a couple hundred miles in "stop and go" city driving. I have the same setup as you and I put about 300 miles on it before doing any hard launchs.
