I've been looking at a replacement for my electric fan that would increase fan output to 3300 cfm's, but it will also drain 18 amps from the alternator, which brings me to my question; does anyone know the output of the stock alternator, or whether it can handle almost nine more amps on draw?

Depends on which year SHO you have. I believe the early SHO's (89-91, or 92) put out like 90 amps or something. And then in 93 I think they went to the 130 amp alternator. Post your year, and you will get a better response. Almost positive on 130 amps for the newer or all Gen II's.

89 to 93 mtx had 90 amp alts
94 and 95 mtx had 130ish amp alts
as did the 93 to 95 atx's

The connectors between the different alternators are not interchangable.

Well I have a 93 mtx, but 90 total amps should be fine so long as the stock equipment doesn't suck 72 amps already. Thanks for the info.
