Just put new brakes on my 95, same as I've swapped pads on all my other cars in my life, but after a few miles they squeal like crazy. Both in forward and reverse. Any thoughts?

Probably one of the backing plates dragging. If not, could be the material of the brake pads/ or combination of pads and rotors. Did you replace or resurface the rotors?

No, didn't have the rotors turned. It actually sounds like the pads are dragging on the rotors sometimes. Then at slow speeds there's the horrible squealing noise

Many parts places screw-up listings when there is a model year change. There is a good chance they gave you 598 pads (for 96 SHO) when you should have gotten 601's.
The 598 pads are much wider (when looking at them flat on the floor) and the inner edge could be touching your center section on the rotors.
Bit of a long shot, but it matches your symptoms.
If it turns out to be true, you can get the FN-74 brackets which puts the caliper further out where it does not touch the center section.

IMO, if you don't get new rotors (cheap enough), get the old ones resurfaced for $10-$20. Get the anti-squeal spray for the backs of the pads.

That will take care of the noise. Unless you buy track pads like I do, then noise dust are a cheap price to pay with good pads!!

The pads fit in the same calipers and look exactly the same, except they are wider by 3/8", which doesn't show up unless you place one over the other.
If it is the 598 pad, just take off one front wheel and see if the pad is touching the part of the rotor where the studs come through (the raised part of the hat section).
That diameter will be shined up if it is touching.
