Weird rattle noise from valve train?

I think you're overreacting. My TOB can be noisy sometimes too, that's just the way they are. I would leave the TOB alone for now. The rest of the work you listed can be done without pulling the engine or trans.

Guess that means I won't I have to wait to start repairs, just tackle the shim and timing belt over a weekend. And TOB's make a little noise eh? Yeah its not really loud enough to be a concern anyway.

Instead of rebuilding the 3.0L I'd be nice to rebuild a 3.2L heh heh heh

1) prop up clutch pedal (releasing tension on cable)
2) disconnect clutch cable from trans
3) slide clutch lever towards front of car

that should pull the TOB away from the pressure plate. If it is your TOB the noise should stop.
