too rich sho, fouling plugs, help!!!

I have read a topic about this elsewhere on this forum but didnt really help me much. I recently had the motor in my 1995 rebuilt. since i have gotten it back its had a few issues to say the least. heres a short list:

constant stalling: mechanic removed cruise control setup( rotted) so i had a vaccuum leak which i fixed by installing new speed control unit.
still stalling but less frequent: fouled plug, changed no difference.
replaced idle air control, helped but still the same,even after relearning idle it would idle for a few minutes, idle would go down too low, come back up and stall. I get an intermittant check engine light but the car will stall before i can get the code.
plugs fouled again, parked it for the winter.
she is running way too rich and i have cleaned the maf sensor and swapped with 2 working ones and still no change. im getting ready to pull the beast out since its finally getting nice in ohio and want to have it running at its best so any info would greatly help and be much appreciated.
(I no longer take my vehicles to this "mechanic" since he hodge podged a lot of things)

No KOEO codes at all? Any hissing sounds (to indicate vacuum leaks)? Do you have EGR? O2 sensors clean and plugged in?

Start with new o2 sensors, and there should be codes, stored or otherwise.
Take a heat sensor reading on your cats (in and out should be same or near) and as a last resort, disconnect your Y-pipe (since it has been off lately) and see if anything improves.
Same injectors as before the rebuild?

if the cel ever came on, there are stored codes. extract them and tell us what they are.

thanks for all the helpful tips guys, definitely a great starting point. definitely going to replace the o2 sensors since they are probably the originals. as for the fuel injectors, they are the same as before the rebuild. the temp sensor my be the issue since the gauge tends to jump around sparatically. first things first and have to repair the coolant leak but thanks so much for all the help guys, ill get back to you with updates on how its doing and if there are any codes.

There are 2 temp senders. One for the gauge and one for the computer. The big one closer to the thermostat is for the computer and the little one by the coil is for the gauge.
