I have Dunlop SP Sport 5000's size 255/60/ZR15. They are usually left at 32psi but I noticed they can take 51. Would there be any advantages or disadvantages to increasing the psi?

The PSI on the tire is what its max rating is, not the recommended pressure. Stick with the pressure that is listed on the sticker on the rear passengers door, or close to that pressure. 35 is the recommended, I think 32 is a little on the low side, I usually run 35-38.
