I was planning a 235/40-18
But a 225/45-18 I may go with.

Although the 235-40 is a better size... I unno

I would think you might be best off with the 235 at a 40 height sidewall. I do not think that it will touch, but have not tried it on an 18 inch rim, so I am not positive.

Yes it will fit. No it will not touch the sidewall. 235/40-18 is a good size. I know someone with this exact setup (with 18x8 wheels no less) on a 99 Taurus SE, lowered, and it doesn't rub.
