The cats themselves aren't actually the issue on the Ecoboost, more so it's the diameter of the downpipes that are restrictive and contain unnecessary bends in the exhaust that cause that restriction.
For emissions compliance I would keep the cats, but upgrade to either a set of PPE or Stainless Works downpipes to get the power increase and sound you are after. We offer both, with the PPE offering being $1300-1600 depending on options with a 12-14 week leadtime currently, and the SW version on an 8 week lead currently due to material constrains and at $980.
The PPE are guaranteed to pass emissions and not set of any codes, the Stainless Works version are hit and miss, hence the big price difference.
