While there isn't much about my 2014 SHO P/P that I can find fault with, every so often I do find myself craving a wider wheel/tire setup. That being said, is it even possible to go wider than the 8" stock wheel width on my 2014 SHO P/P? I'd love to be able to upgrade to a 20"x10" wheel setup, but I'm not convinced it would work.

And if not, is there any chance of going with a wider tire than the 245/45R20s on the stock 20"x8" wheels?

I haven't changed width on tires but I did go from 20X 8 to 20X 8.5 for rim width. I have heard of 20X10 but I personally wouldn't recommend it.

True - I did notice that most of the aftermarket wheel sets offered/recommended for the SHO had a 8.5" width. Personally, I'd be fine with a 20"x9" wheel setup.....if I find the right ones at the right price.

So going to like a 32mm means the tire gets "pushed out" closer to the fender more by 7mm...correct? I'm also looking for a more "flush," look.

I don't know what the clearance is on the stock tire. Just make sure you measure and have enough room to move it whatever distance you're changing the offset. It always sucks to get new tires and rims and have them rub on lock.
