Is there any simple fix for this, besides pulling the bulb, coolant tank has plenty of coolant, sometimes it comes on sometimes it doesnt. Cleaned the connector and the sensor portion as well.

You just need to pull the sensor out and clean it. It works by two metal probes conducting electricly thru the coolant. when the probes corrode than it doesn't matter how much coolant you have it thinks its empty.

The first guy said he cleaned the electrodes already..

Are you 100% sure you aren't leaking coolant anywhere? If you've thoroughly cleaned the sensor, its a possibility that your sensor could be going bad

As much as I cleaned my last sensor, the light would not go off, post a wanted to buy for a new sensor, and you should be good to go, granted the problem isnt bigger, like a leak or something.

If you unplug the sensor, the light will not illuminate. At least it doesn't on my car.. Mine's been unplugged for 5 years ever since the sensor shorted out and melted down.
