You'll want to segregate classes, which means determining what the classes are (Mustang, Taurus, None of the Above, whatever). You'll need X spaces for each class, obviously.
Dealership's essentially providing space, maybe a hose for car wash capabilities? As for a BBQ grill, I have a new one this year & can offer the use of it. Trasporting it? Not sure how that's going to work, but perhaps I can have Linda take the day off & bring it in the van while I bring the SHO. Have the dealership showcase one of their high-end vehicles, like Dinger did with the Roush Stage 3 Mustang, or something like that.
Meeting area inside with chairs, should something arise weather-wise would be a good thing. If you're doing peer judging, that's cool, otherwise, plan on having some dealership staff be available for voting perhaps. That's about the extent of their duties, I'd think, other than perhaps having someone from the dealership address the contestants on the history & focus of Lucini. The rest of the event, trophies, food, etc. would likely be club-fronted, if the club's getting the entry fees. If the entry fees are going to a charity or whatever, then I'd think it'd be nice for the dealership to front the trophies, and we could pony up for the food amongst ourselves.
Those are some thoughts, but again, since this is expected to be a NESHOC event, it's going to be a case of "this is what the car show committee has come up with, we hereby present it to the board for approval, and upon the ok, we'll implement", or something along those lines.
