Only experience I have with custom engine tuning is I had a SuperChips Flashpaq for my Wrangler for a short period of time.

Sounds like Torrie and Livernois are the two top ones to consider? For now the only other thing I'd be doing is possibly a drop-in filter.

What are some before/after 0-60 times, 1/4 mile, etc. with just a tune?

I run Livernois Stage 4+ 93 Octane and I'm very happy with it. My best time last Fall was 13.006 with just a tune and I weighed over 300. I'll be in the 12's this Spring.

Can't say enough awesome things about Torrie. Great customer service, and the tune is awesome. Got the iTSX, and feel it's well worth the little bit of extra cash. He's running a $30 off special on them now, so it wasnt much more than the X3. Works perfectly, and is basically idiot proof.
