Engine oil cooler

The 3.4L V8 SHO engine has an oil cooler on it already. Located between oil filter aaaand block. The oil cooler in the SHO is water cooled.

One of the instruments I installed when I got the SHO was an oil temp gauge. It has been very handy and has shown that the stock SHO oil cooler is very effective. Even in the high days of August and driving the car hard, the oil temp seldom goes over about 190F, and I have never seen it go past 210F.

I guess I am just kind of big on over protection. Think back to the days of the 460 cid Police motor, or the Cobras with the Police package. These engines had the same water cooled heat exchanger that the SHO has, in addition to a forced air radiator type in the front grill work of the car. My sedan is in for some extended run time, and I don't want to have the oil temp any over 190. My question is in reality, which line on the cooler is in and which is out? Second question, where do I find a good service manual for this car?
