im going to finally do a log on my car after being tuned for over a year, can I expect any discernible difference with just being a basic 3 bar t-stat car.

A datalog will give you and the tuner insight into potential areas of improvement; this is a case-by-case scenario. If you are already tuned for 3bar/tstat, I'd wouldn't expect earthshaking improvements like between stock & tuned, for sure.
