I'm probably just blind but I can't see the coolant tank fill lines, I know the level should be between the "cold" and "hot" lines, but I can't even see the coolant itself so I'm thinking I should top it off, but I just don't know where to. No overheating so far and no lights thrown. Thanks!

Add some if you can't see it. It won't hurt to have too much in there. If you have it very close to the top, when the car warms up it may overflow from the top, but it won't hurt anything. You don't want it empty.

I was curious though if the coolant level in the tank was not visible wouldn't this throw a low coolant light?

The coolant overflow tank is pretty big; the level has to get down quite a bit lower than where you can't see it to trip the sensor (assuming it works). Just fill it like 3/4 of the way up and you'll be set. The level really isn't that important; that it's not empty is.
