any last items needed before i lower the SHO?

Are there any negative effects to not replacing the strut bearings when i put on my tokico/intrax on my 89? or is this more of a 'while youre at it' suggestion?

Also, im getting new strut mounts for the front and back. Besides these, is there something else that 'needs' be replaced?

It can be a "while you're at it" type of thing. But for the most part if you dont think they have ever been replaced you really should change them.

Strut Mounts, Front strut bearings and pinch bolts are all recommended when you install your new suspension. That's all you really need for the install. Some may suggest that you buy eccentric bushings for the rear so you can get more adjustment to the rear camber when the lowering springs are installed.

Ok. Well since im 99% sure that this is pretty much all original factory parts except for tie rod ends which i replaced, ill be getting the strut bearings too.
The rubber piece between the spring and strut seems pretty old and kinda worn out. Ive read about people replacing these when doing struts. Is it pretty important to get these changed?

I think that the rubber pieces that you're describing are the strut mounts. If they are worn I would definitely get new ones. They can cause some noise if they're worn out. If you get all the parts you need, bearing, mounts, boots, it'll make installing them easier as well. You can assemble the aftermarket struts and springs and just swap out the old ones and put the new ones in. Instead of having to swap over parts from the old one to the new ones.

Something I forgot to mention. If you do want to do it like that, get all the parts and have them ready to go in, dont foget about the strut boots! I did, it wasnt a big deal just had to order some but they're easily forgotten about. SHO Nut has them.

The rear mounts can cause mental illness if not dealt with. The intrax springs will bottom out often. Tell you therapist how you feel, be honest. He may prescribe 4-coilovers a day. He may ask if you are in touch with the lower control arms. If the frame bushing has had a half shaft grease monster softening it for sometime, or if in fact if the ball joint has been "out on the town" too many times. How does that make you feel?
