It's kinda weird. At one point my a/c will blow ice cold but then it will just start blowing warm air. Then out of no where it will be cold again I was suspecting the compressor or just the pulley isn't engaging the AC or something. Has anyone heard of this before??

Have you checked to see if its low on refrigerant? If its low it will cycle on and off. Turn it on then watch to see if the clutch keeps engaging and disengaging.

A heat related open in the clutch coil can do that. Ditto for the CCRM.
At startup it works fine, after a few minutes the coil heats up and opens.
Diagnosing was a bit difficult, had to attach extra wires at the clutch connector and run them into the cabin to pair of meters. Then observe while driving.
On one failure I found maintaining 75/80 MPH would cool the clutch enough that the AC stayed working.
The clutch coil can be replaced without disturbing the refrigerant charge.
How's the clutch gap?

yeah, clutch gap too large can also cause intermittent clutch engagement and this symptom.

Damn lol I hope it's as easy as just refilling the refriderent but if not ill try just replacing the clutch. I've never worked with an AC system the clutch is just in the pulley that the belt is on??

Before you go spending money on parts pull the face off the clutch and remove a(the) shim and see if that gets it going again.

I re-shimmed the clutch on my car's AC compressor last year and I had never done that int he past, just followed the steps from a thread here.

My car is an ATX, I'm not sure if the AC compressors are the same, but the re-shimming wasn't that difficult just take your time and not rush anything.

All you need is to take out the bolt holding the clutch face/plate, then with a flathead screwdriver gently start prying on the face/place of the clutch, turn it so you pry it evenly and at some point you can even take it out with your hand.
Just be careful, there might be about 2 to 3 shims in there. Take out the thinner one and also be careful because those shims like to drop to the floor when taking out the plate. ;)
