Dealer should be fine for transmission, make sure they do fluid exchange not a flush. Motorcraft or any major brand of Mercon LV fluid - Castrol, Valvoline, etc is fine. I hear Valvoline has a professional trans conditioner fluid they can add, if you have a Valvoline service center near you.

I personally would run Amsoil, given the option.

Its super easy, if you change your own oil I would do this by yourself as well.

The only thing I would say is if you're going the super easy route (removing drain plug, draining, and adding fluid) you're not swapping out all the fluid. I think I read somewhere you're only getting about 1/3 of the total fluid due to a lot being in the torque converter. I have seen a DIY transmission fluid change where you remove the lines to/from the tranny cooler. Then you put the line that returns the cooled fluid to the transmission in a bucket of new fluid and the other line (that sends hot fluid to the radiator) in an empty bucket. Get a friend to run the car for a little bit and that will suck new fluid into the tranny and push old fluid out into the other bucket. Once new clean fluid comes out into the bucket, you've swapped all the fluid. I haven't personally done it, but it makes sense that it would work and swap out all the fluid as opposed to a small fraction. It's still not hard, but more involved than changing oil.

I get 5 quarts out which is about half. I wouldn't complicate my life and just do the 5 quarts every 30k. More important than trans is ptu every 15 to 20k.

More like 1/2 per round of simple drain/fill. I think 4.5-5 quarts is the norm. So 3x will get out about 87% of the old fluid (assuming you work the gears with the engine running in between). If you are more mechanically inclined, then go the trans cooler lines route and don't get distracted during the procedure.
