I know the 89-92 SHO's have a slightly different cable from a 93-95. However, I am just curious if a Throttle Cable from a 93 ATX would work on my 95 MTX? Any input is appreciated.

The primary difference is how the cable attaches to the firewall. The older-style throttle cables have a round firewall plug that clicks into the hole. The later-style Gen II cables have an oblong firewall plug that bolts to the firewall. If the firewall plugs are the same, then you need to compare the cable ends, length of the cable, and length of the cable housing.

Unfortunently I am not home to take care of this myself. I'm just going to have to find a 93-95 MTX Throttle cable. D'oh.
