Is the Motorcraft RT-1112 similiar to the revised version B thermostat that has the jiggle valve? Also, is there a seal I should replace while replacing the thermostat?

It is an o-ring instead of a gasket.
Don't know about the RT-1112 thermostat. If it doesn't have a giggle valve, you can drill a small hole in the same location.

I don't have it here in front of me so I can quote the part no., but I ordered an OEM one from Silver State Ford in Las Vegas, and the one they sent me has two jiggle valves, and came in a Ford (Motorcraft) box. It says 192 deg., and "Made In Japan." It came with the seal (which wraps around the rim of the thermo.)

MSRP listed at $39.16, discount price from Silver State is $23.07.

Plus shipping.

-MOST Ford parts come with two part numbers, IF they have a Motorcraft alternative. RT-1112 is a Motorcraft number. most all Motorcraft numbers have a long Ford number, but not all Ford numbers have Motorcraft numbers.(clear right???) the Ford number for RT-1112 is E9DZ-8575-B the revised thermostat with a jiggle valve. and it comes with the rubber o-ring seal. so the answer to your question is yes......
