SHO winding up slowly

My SHO has been stored in a garage for a few months, but this weekend I put my dad's friend's repair plates on the car, and took the SHO out to clean out the cobwebs. I took it out on the highway, drove it about 50 miles over the course of a few hours. One thing I noticed was that when I started the car off in first gear from an idle, it took a few moments for the car to "wind up." What I mean by this is, I would step on the accelerator and let out the clutch like usual, by the car wouldn't go very fast for about a sec or two, then wammo, it would take off like crazy. Only momentarily would it do this, but it did it every time. No backfire or idle jumping, it was very smooth, just a bit weak. Could this be due to a clogged fuel filter, or possibly a dirty air filter. Maybe my spark plugs or wires fouled due to being in storage? Any ideas. All these things except the wires are new within the past 1000 miles. Thanks.

Sounds more like the secondary butterflies are not closing to increase the low end power. Check the secondaries for movement as you rev the engine with the throttle shaft. They are held closed by vacuum from the manifold from the tap on the center of the rear plenum and opened by the solenoid valve on the rear plenum that releases the vacuum.

My 90' does the exact same thing, if i step on the accelerator hard it takes a couple of seconds to kick in. Then all of a sudden i get a burst of speed i thought it was the fuel pump
