Why is it that almost every car I see on the road has rotors that look almost brand new and mine have a huge rust ring around the outside and inner edge? What brand or type of brake rotors can I get that won't do this?

It's bare metal... What do you expect??? Paint them or coat them in something. If you can leave the firepath untouched, powder coat them.

Make sure you aren't using SLO brake pads. If you are using SLO brake pads which are smaller, it will leave a portion of your brake rotor (outside edge) with no contact to the pad and as a result a rust ring that will never go away.
