I have all of this ready to go in, but I need to know what to salvage off of the old assemblies.

Also, what size crow's foot wrench do I need to get the old struts off the springs? 21mm?

It sounds like you have everything... there is a strut bellows and a lower rubber strut mount on the front struts, the rears might have them too

I dont think you need a crows foot, just remove the struts then the springs from the assemblies and replace

Make sure to get a ratcheting box end wrench to remove the nuts from the rear towers; it will save you a lot of time and bending over in the trunk !
