The sensing wires in the MAF sensor can become contaminated with dust, dirt, oil, etc, especially if you use an oiled filter.

The sensor can be cleaned by gently spraying with an electrical contact cleaner or even brake cleaner. If you break the filament wires, you will need to buy a new sensor.
